Her wines are all vinified with native yeast in neutral vessels, lightly filtered and bottled with minimal sulfur. She aims to find a true expression of the island, its history and vines that will outlive her. Saline, sanguine, and mature is how I would describe this rosé. I haven’t had much quite like it.\u003c\/span\u003e\u003c\/p\u003e\n\u003cp\u003eDolores began to vinify and bottle her own wines in 2013 after a long career of farming vines in the island's Northern Valle de la Orotava. She focuses on the primary grape of the region, Listán Negro.
