Typicity: Typical for Cru Beaujolais from Chiroubles. It exudes an effortless elegance, like Angela Huston or Dame Judy Dench.
Bio: Gilles Paris began bottling his owns wines in 2005 with the help of Marcel Joubert after almost fourteen years of tending his in-laws' vines for the co-op. He now manages 8 hectares in Chiroubles, Morgon and Fleurie.
In the vineyard he works organically and is currently awaiting his certification status. In the cellar, all wines undergo some form of carbonic maceration and fermentation is spontaneous. Gilles will use sulphates at bottling when necessary, but usually opts to forgo the addition. He is one of five brothers, and if you ever see his brother Jeromé's wines, nab yourself a bottle.
This stuff is kind of hard to get a hold of nowadays in Paris, so I think it's pretty cool that we can get it here in Kansas.
