Typicity: Atypical as there is nothing conventional about Hiyu Wine Farms. That being said, this bottling drinks clean and very brooding.

‘This is the most epic version of this cuvée. It’s the first time we’ve bottled a pure Syrah from this parcel. Previous wines have always included a significant amount of the adjacent Grenache. The Grenache brings perfume, levity and delicacy, but it also hides the trajectory of Syrah’s power.’

If ever there was a magical place on earth, it would be the thirty or so acres that are Hiyu Wine Farm. Just 22 miles south of Mount Hood, Dexter cows and fowl graze amongst the vines as the entire property is a testament to biodynamic agriculture.
The wines are all spontaneous fermentations, bottled without fining or filtering and cellared until Nate feels they are ready. When I grow up I want to be like Nate and his partner China Tresemer and make wine like I imagine a hobbit might.
