Bio: Dolores Cabrera is a testament to stewardship on the island of Tenerife. She works her 100-year-old Listán Negro vines organically, picks all grapes by hand with her all women team (as she believes women are more sensitive to picking correctly). Her cellar was also the first ever built in Valle de La Orotavia, a Northern region on the island prized for its volcanic soils and earthy wines. Her wines are all vinified with native yeast in neutral vessels, lightly filtered and bottled with minimal sulfur. She aims to find a true expression of the island, its history and vines that will outlive her. Saline, sanguine, and mature is how I would describe this rosé. I haven’t had much quite like it.

Dolores began to vinify and bottle her own wines in 2013 after a long career of farming vines in the island's Northern Valle de la Orotava. She focuses on the primary grape of the region, Listán Negro. This bottling features fruit from 100 year old cordon trenzado (braided) vines.
