Bio: Jean-Marie Rimbert is an old hand at making low-intervention wines. While his original training is as a general agriculturalist we feel his 40 plus years of winemaking more than qualifies, even though he still refers to himself as a paysan. The hallmark of his style is a gentle extraction that translates to freshness of fruit and delicate spice. He uses neutral vessels and spontaneous fermentation in the cellar with just a touch of sulfur at bottling.
