Coppa is trimmed from underneath the scapula of the hog's shoulder; it is a continuation of the loin and finishes at the collar of the hog. We use Sea Salt to preserve this cut and we then season it with our pepper run and dry age it from 4 to 6 months.
Ingredients: Anti-biotic Free Pork, Sea Salt, Black pepper and our Pepper Blend.
It is delicate on the pallet. Rich in flavor.
