Bio: 4th generation winemaker, Laetitia Billiot, carries on just like the generations before her. She is the first woman of the family to be at the helm since taking over for her father, Serge, in 2015. Almost all of their holdings are from mid-slope Grand Cru sites in Ambonnay. The vines are at minimum 50 years old, all organically grown and fermented in enabled stainless steel tanks (with the exception of the barrel fermented Cuvée Laetitia). The depth of fruit and power from Billiot remind me of smoked almonds, lemon merengue and brioche. There is zero Malo-lactic in their wines and they are plenty powerful on without it.
