Madcap is our new limited-release lactic bloomy rind cow's milk cheese. Like our Intergalactic, it uses the enzyme of cardoon thistle flowers (globe artichoke) instead of rennet, an ancient Roman method (making it vegetarian too).
Its unique cone shape is more than a standout at the cheese counter: It controls the ripening. Our proprietary cultures forms a delicate wrinkly rind and brings lemon-like acidity, notes of tropical fruit and fresh-cut grass, with a lingering finish.
Aged for 14 days, it has an exceptionally creamy paste and a light blond under-rind. Madcap was a challenge to our cheesemakers: Develop a competition-worthy entry for the International Cheese and Dairy Awards in the UK. Remarkably, within weeks, it brought home Silver.
