Varietal(s): 40% Carignan, 30% Grenache, 30% Cinsault
Vineyard Management: Certified organic, some Biodynamic practices
Winemaking: Native yeast fermentation, aged in used barrels from Chassagne-Montrachet, minimal sulfur addition at bottling
Vegan: Yes
Typicity: Typical, for a red blend from Languedoc. Singular for its complexity as the vines used for this blend are 50-60 years of age intended to showcase Maxime's terroirs of schist and limestone.
Bio: Maxime set out from under the tutelage of Jean Foillard to discover his own path in the Languedoc. He learned to love the older vines while working under Didier Barral in Faugeres and now most of his efforts are spent trying to revitalize the soils of his parcels that have been chemically treated for decades prior.
Today, Maxime is seen as one of the great talents of the Languedoc and an early champion of the natural wine movement in France. Thankfully, you don't need to know his pedigree to taste the incredible craftsmanship on display.
